Buffalo shrimp

Most people have heard of Buffalo wings, which are typically fried chicken wings coated in a sauce of melted butter, hot sauce, and cayenne pepper. None of the recipes contain buffalo meat. The name buffalo is used because this dish originated in Buffalo, New York. For those who like spicy food, they are great but not everyone likes fried foods. This recipe is my "healthier" version. Serve with celery and blue cheese dip along with rice.

Ingredients
1/2 stick butter, melted and cooled
1/3 cup hot sauce, preferably Frank's
1/4 - 1/2 teaspoon cayenne pepper
1 1/2 pounds shrimp, peeled and deveined
salt, pepper
1 recipe Blue cheese dip, optional
Celery stalks, optional
Storage
• Shrimp do not reheat well because they become rubbery. These are best eaten immediately.
Variations
• Experiment with different hot sauces.
• Use chipotle powder instead of cayenne pepper.
Instructions
• Combine the butter, hot sauce, and cayenne pepper in a small bowl.
• Put the shrimp on a rimmed baking sheet. Toss with the hot sauce mixture. Spread the shrimp to be in one layer. Season with salt and pepper.
• Broil for 2 minutes. Turn the shrimp over and broil another 2 minutes until just cooked through.
• Serve with blue cheese dip and celery. Pass extra hot sauce at the table.
