Caramelized onion, arugula, and blue cheese pizza

This is an unusual pizza that I invented for one of my pizza cooking classes. It's an unusual combination of ingredients, but it is elegant, light, yet very satisfying. Please read my blog on How to caramelize onions.

Ingredients
1 recipe of Pizza dough, at room temperature
1 recipe of Caramelized onions
1/4 cup crumbled blue cheese
1 cup shredded Monterey Jack cheese
1 1/2 cups arugula
1 - 2 teaspoons honey, slightly heated for easier drizzling
Instructions
• Preheat oven to 500º.
• Oil or spray your pizza pan. Roll the dough into approximately a 14-inch circle; don't worry about it being perfectly round!
• Spread the caramelized onions on the pizza dough. Scatter the blue cheese on the onions and top with the Monterey Jack cheese.
• Bake for 10 minutes until the cheese is melted and golden brown.
• Top with arugula and drizzle with honey.
Variations
• Add a layer of prosciutto before adding the blue cheese.
• Add slices of garlic directly on the crust.
Storage
• The dough can be made the night before. Cover and refrigerate. Allow it to stand at room temperature 1 hour before rolling it out.
• The caramelized onions can be made ahead and refrigerated 2 - 3 days or frozen for 3 - 4 months.
• This pizza is best eaten immediately although it will keep in the refrigerator a day or two. The arugula will wilt, but the taste will be decent.
