Chinese chicken with orange sauce
I was going through my spices in order to share some with a friend, and I found an unopened container of Chinese 5 spice powder. I decided to add it to some other ingredients for a rub to go on chicken. It was very good, but the leftover chicken meat was terrific in both a frittata and quesadillas. This is a dish to make when you want something ethnic but not spicy.

| 3 pounds boneless chicken breasts, washed and dried |
| 1 tablespoon Chinese 5 spice powder |
| 1 tablespoon onion powder |
| 1 tablespoon garlic powder |
| 1 teaspoon salt |
| 1/2 teaspoon pepper |
| 1/2 cup orange juice |
| 1 tablespoon butter |

| • Use any chicken part - drumsticks or thighs. Adjust the cooking time. |

| • Store any cooked chicken covered in the refrigerator for 3 - 4 days. Store the orange sauce separately. |

| • Combine the Chinese 5 spice powder, onion powder, garlic powder, salt, and pepper in a small bowl. Mix thoroughly. Reserve 2 teaspoons of the spice mixture for the sauce. |
| • Coat both sides of the chicken with the remaining 2 1/2 tablespoons of the rub. Marinate for 30 minutes at room temperature or cover and marinate longer in the refrigerator up to 24 hours. |
| • Preheat the grill. When the grill is hot, cook the chicken for 5 minutes. Turn and cook another 5 minutes. Check for doneness. Alternatively cook the chicken at 450º for 20 minutes or until cooked through. |
| • While the chicken is cooking, add the orange juice, butter, and remaining 2 teaspoons of the spice rub to a small pan. Bring to a boil. Reduce the heat and simmer until the chicken is done. |
| • Spoon the sauce over the chicken. |
