Ginger tea
I'm a huge fan of hot tea, especially when I'm sick. Ginger is know for its anti-nausea properties—think ginger ale. This recipe requires fresh ginger, not dried. I don't bother peeling the ginger, so sometimes there are flakes in the tea. Peel the ginger, if desired.

| 4-inch piece of fresh ginger, sliced into 1/4-inch rounds |
| 2 cups boiling water |
| Instructions |

| • Put the ginger slices in the bottom of a teapot. Add the boiling water. Let steep 3 - 4 minutes. Pour through a metal strainer, if desired. |

| • Add honey or sugar. |
| • Add lemon juice. |
| • Add whole cloves or a cinnamon stick. |
| Storage |

| • Ginger can be frozen for 3 - 4 months. Peel it and cut it into 4-inch pieces and store in a resealable bag. |
