Las Chicas fresh cheese ball 
The original inspiration for this recipe from Gourmet Magazine called this a cheese spread. But when I served it at a party, everyone decided that it was good, but needed some work, and the name was wrong. So, I tweaked the recipe and served it to my cooking group. We decided to call it a fresh cheese ball. Whatever the name, it is an outstanding accompaniment with wine. It was also make a good sandwich.

| Ingredients |

| 4 cups coarsely grated cheddar cheese | 
| 1 rib of celery, finely chopped | 
| 2 green onions, finely chopped | 
| 1/4 teaspoon ground pepper | 
| 1 teaspoon drained horseradish | 
| 1 teaspoon mustard | 
| 1 teaspoon Worcestershire sauce | 
| 2/3 cup mayonnaise | 
| Paprika or ground chipotle powder for garnish | 
| Instructions |

| • Cut the coarsely grated cheese into small pieces. | 
| • Combine the cheese, celery, and green onions in a large bowl. Mix thoroughly. | 
| • Mix the ground pepper, horseradish, mustard, Worcestershire sauce, and mayonnaise in a small bowl. Stir to combine. | 
| • Add the mayonnaise mixture to the cheese. Combine thoroughly. Garnish with paprika powder, if desired. |

| • Add chopped roasted bell peppers. | 
| • Use half cheddar cheese and half Swiss cheese. |
