Latin pulled pork

This is a combination of many recipes, but it was worth the effort to develop. Since it is cooked in the slow cooker, it requires very little effort. This pork can be used in so many different recipes from Cubano sandwiches to barbecue pork sandwiches. See my recipe for Latin pulled pork sandwiches

Ingredients
4 garlic cloves, put through a garlic press
1 teaspoon onion powder
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
2 pounds boneless pork sirloin roast
1/2 cup orange juice
1/2 cup lime juice or vinegar
4 onions, sliced or slivered
Instructions
• Make the spice paste. Add the garlic, onion powder, oregano, salt, and pepper in a small bowl. Add the vegetable oil and make into a paste. Rub this over the pork and put it into a resealable bag. Add the orange and lime juices. Seal the bag and remove as much air as you can. Marinate 1-3 hours in the refrigerator, turning occasionally.
• Add the onions to the bottom of a slow cooker. Add the pork roast and the marinade on top of the onions. Cook on low for 5 hours until very tender. Pull the meat apart using two forks.
• Cool to room temperature before storing.
Variations
• Use red onions instead of white or yellow onions.
• For a spicier version, add sliced jalapeños or chipotle powder.
Storage
• Make this a few days in advance, cover then refrigerate.
