Steamed green beans 
Green beans are a great side dish because they are low in calories and fast to prepare. Cook until your desired texture. Some people like green beans crunchy, others like them limp. I make no judgements! Eat your veggies the way you like them.

| Vegetable steamer, optional | 
| Medium saucepan with a lid | 
| Ingredients |

| 1 pound of green beans, ends trimmed | 
| 1 tablespoon olive oil or butter | 
| salt, pepper | 
| Instructions |

| • Cut the green beans into 1 - 2-inch segments, if desired. I like the look of long green beans on a plate, but they are harder to eat. | 
| • In a saucepan, add about 2 inches of water. If you have a steamer, use it, otherwise do without. Add the green beans. Cover the pan. | 
| • Steam/boil until tender, but not falling apart, about 3 - 8 minutes. Test with a fork. When the fork easily pierces the green beans, they are done. Drain and put back into the pan. Return the saucepan to the heat. | 
| • Add the olive oil or butter. Season with salt and pepper. |

| • Add chopped garlic. | 
| • Add a dash of lemon juice or zest. | 
| • Add fresh herbs or dried spices. Experiment with flavors. | 
| • Use balsamic vinegar instead of olive oil. | 
| Storage |

| • Cover and refrigerate any leftovers. Use them in a stir-fry, risotto, soup, or pasta dish. |
