Taco seasoning
It's simple enough to buy taco seasoning at the grocery or even specialty stores, but I like to make my own in order to control the amount of salt and sugar in the mixture. Yes, sugar is sometimes added to spice mixtures especially if it is a 'salt-free' blend. I double or triple this recipe and store it for a quick weeknight meal. | 2 tablespoons ancho chili powder |
| 1 tablespoon chili powder |
| 1 tablespoon cumin powder |
| 2 teaspoons red pepper flakes |
| 2 teaspoons dried thyme |
| 2 teaspoons garlic powder |
| 1 1/2 - 2 teaspoons salt |
| 1 teaspoon ground coriander |
| 1/2 teaspoon pepper |
| 1/4 teaspoon chipotle powder or cayenne, optional |
| 1/4 teaspoon ground cinnamon |
| Variations |

| • For a mild version omit the chipotle powder or cayenne. For a spicy version double the amount. |
| • Replace the ancho chili powder with regular or hot chili powder. |
| • Replace the dried thyme with dried oregano. |
| Storage |

| • Store in a closed container in a cool, dark place. Can be frozen. Use within six months. |
